1 Large Carrot, spiralized or julienned

1 cup broccoli, cute into bite size pieces

1/3 Cup Chopped Onion, or 2 tablespoons dried minced onion

1 teaspoon minced fresh ginger, or ½ teaspoon dried ginger

1 tablespoon yellow curry powder

1 13.5 - ounce BPA free can full fat coconut milk or coconut cream

pinch sea salt, preferably iodized

1/2 tablespoon coconut oil

1 large sweet potato peeled and spiralized with 3 mm blade

4 tablespoons chopped cilantro or flat leaf parsley for garnish
